Preparation
  • Preheat the oven to 160°C (140° fan) 325°F gas 3.
  • Heat 1 tablespoon of oil in a frying pan. Season the chops with salt and pepper and brown quickly on both sides. Put the chops in a baking dish.
  • Add the bacon to the pan and fry quickly, stirring until browned, the put into the baking dish.
  • Add the remaining oil to the pan and cook the onion and pepper for 5-10 minutes until softened. Put into the baking dish.
  • Add the vinegar to the pan and cook until reduced by half, scraping the bits off the base of the pan. Add the wine and thyme and cook for 5 minutes.
  • Pour into the baking dish, cover and cook for 50-60 minutes, until the chops are tender.
  • Place on serving plates, sprinkle with a little thyme and serve with mashed potatoes.
