How to prepare a delicious fried cod with herb vinaigrette
For the vinaigrette
Wash the herbs, pat dry and pick off the leaves.
Chop roughly and mix with the chives, vinegar, lemon juice and olive oil.
Season with salt and pepper and leave to stand.
Wash the cod and pat dry.
For the cod
Season the cod with salt and pepper and fry in butter over a low-medium heat for 3-4 minutes each side, or until golden brown.
Place on warmed plates.
Taste the vinaigrette and adjust the seasoning if necessary.
Pour over the fried cod and serve.
