How to Make a Paleo Lemon Cake
If you want to prepare a paleo lemon cake recipe start heating the oven to 180°C (160° fan) gas 4.
Grease a 20 cm deep loose-based cake tin and line the base with non-stick baking paper.
Sift the dry ingredients into a mixing bowl and stir to combine.
Whisk together the honey and oil, then add the eggs, one at a time, whisking after each addition.
Add the coconut milk, lemon juice and zest, and beat until well combined.
Make a well in the centre of the dry ingredients and pour in the wet ingredients and stir thoroughly until smooth.
Put into the tin and sprinkle the pine nuts on top.
Bake for about 35 minutes until golden and springy to the touch.
Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
