Whip the cream vigorously with the sieved icing sugar.
When it begins to look soft, add the vanillin and carry on whipping until it reaches the right consistency, then put it in the fridge to rest.
Wash the strawberries carefully, dry them, place them in bowls and cover with the Chantilly cream.
Serve, decorating with dainty mint leaves.
