Mexican quesadillas for vegetarians with black olives and cheese, spiced up by chili pepper

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with greaseproof paper.
Mix together the garlic, olives, chilli and the oil. Season with lemon juice, salt and ground black pepper.
Spread the mixture on one half of the tortillas and sprikle with the cheese. Fold over the other half of the tortilla and place on the prepared baking tray. Bake for 15 minutes and serve cut in pieces.
