Homemade vegan bread recipe with goji berries and chia seeds
To prepare a delicious homemade vegan bread first mix together the flour, yeast, chia seeds, goji berries and sugar in a mixing bowl.
Pour in the almond milk and stir well.
Turn the mixture out on to a lightly floured surface and knead for 10 minutes until smooth and elastic.
Put into an oiled bowl, cover the bowl with a tea towel and leave in a warm place for 1-2 hours until doubled in size.
Punch down the dough and cut into 8 equal pieces. Shape each piece into a ball.
Place the dough balls on a baking tray lined with non-stick baking paper, leaving a 3 cm space between them.
Cover with cling film and leave for 1 hour.
Heat the oven to 200°C (180° fan) gas 6.
Mix together the olive oil and almond milk and brush over the dough balls.
Make grooves in the top of each ball with a knife.
Bake for 13-15 minutes until golden and cooked through.
Place the homemade vegan bread on a wire rack to cool completely.
