Beef salad recipe by chef and butcher Dario Cecchini: tenerumi, a cheap beef cut, becomes gourmet in this classic of Tuscan cuisine

Boil the beef knees in a fresh vegetable broth, prepared with celery, carrots and onions.
Once boiled, remove the meat from the bones and let it cool.
Mix the "tenerumi" with raw vegetable salad made from fresh, finely cut vegetables (celery, onions, carrots).
Dress according to taste with salt, pepper, extra-virgin olive oil and a dash of vinegar.
