Sugar Free Muffins with Ricotta and Raisins
To prepare delicious sugar-free muffins first heat the oven to 190°C (170° fan) gas 5.
Place paper cases in a 12 hole muffin tin.
Sift together flour, baking powder, bicarbonate of soda and salt and set aside.
Lightly beat together the oil and egg in a mixing bowl.
Beat in the vanilla, ricotta and agave nectar.
Stir in the oats, then gradually add the flour mixture until just blended.
Stir in the sultanas and raisins.
Spoon into the paper cases and bake for 20-25 minutes until risen and golden.
Cool in the tins for a few minutes, then place the sugar-free muffins on a wire rack to cool completely.
