How to make sugar free chocolate muffins
To prepare the sugar free chocolate muffins first preheat the oven to 180°C (160° fan) gas 4.
Grease 12 paper muffin moulds with the softened butter and arrange in a 12-hole muffin tray.
Beat the eggs in a large mixing bowl with an electric mixer until very foamy, 2-3 minutes.
Add the yogurt and liquid stevia, and mix thoroughly to combine.
Fold the flour, baking powder, and cocoa powder into the egg and yogurt mixture.
Add the rum and chopped chocolate and stir well to distribute evenly through the batter.
Divide the batter between the muffin moulds. Bake for about 25-30 minutes until risen and dry to the touch.
Remove the sugar free chocolate muffins to a wire rack to cool before serving.
