To prepare the gluten free dairy free chocolate chip cookies start heating the oven to 190°C (170° fan). Line 2 large baking trays with non-stick baking paper.
Beat together the margarine and both sugars in a mixing bowl until light and fluffy. Beat in the egg and vanilla.
Gently fold in the rice flour, cornmeal, baking powder and salt, followed by the chocolate chips.
Place spoonfuls of the mixture well apart on the baking trays.
Bake for 10-15 minutes until golden. Cool on the baking trays for 5 minutes, then place the gluten free dairy free chocolate chip cookies on a wire rack to cool completely.
