An easy pea and leek recipes: a tasty soup prepared with creamed peas and leek, to be served with croutons. The perfect idea for a fresh and vegetarian soup.

Wash and trim the leeks and cut into rings.
Peel and chop the garlic.
Wash and shred the lettuce. Heat the butter in a pan and saute the leeks, thyme and garlic.
Add the broth and bring to a boil.
Add the peas and lettuce and cook for 5 – 6 minutes, until the peas are soft.
Remove from the heat and puree finely.
Add the mint and cream and return to a boil.
Season with salt and pepper and serve scattered with croutons.
