Aritsugu is the most popular old knife shop among the cooks in Kyoto. There are 3 gradings among the knives they sell: upper, special and registered. High-grade and hard steel is usded for the upper knife, and the same type of steel is used for special and registered, but the accuracy of the finished work is different. For these knives, the steel is sandwiched with stainless materials, but maintain the sharpness of the knife.
