Bocuse d'Or 2021: Take-Away Dishes
The world of fine dining has been turned upside down during the pandemic. Restaurants faced maybe the most difficult time they have ever known. They had to adapt quickly to new ways of working in order to survive and to keep feeding us with their specialties.
In response, this year's Bocuse d'Or grand finale featured a special prize for the best take-away. Candidates had to create a special take-away menu (starter, main course, and dessert), all based on the same seasonal product: the tomato. In an additional challenge, the candidates had to match shrimp with tomato in the creation of their main course. All of this was to be presented in a box developed by the candidates themselves, using plant-based materials, which needed to be reusable.
The Best Take-Away prize was eventually awarded to the Sweden team. Here you can enjoy all the countries entries, and try to imagine ordering these as a take-away.
