Gourmets in Malta are in for a special treat on 23 October when Stefan Hogan, the executive chef of Attard's Corinthia Palace, joins culinary forces with Pino Cuttaia, the chef-patron of the two Michelin restaurant La Madia in Sicily.
Together the talented duo will prepare a show-stopping seven-course menu with wine pairing, showcasing their respective signature dishes.
Sicilian born chef Cuttaia will draw on his roots with refined technique in "a personal interpretation of and memory of Sicilian classics. Expect dishes like pine cone smoked cod with confit tomatoes, 'Anchovy Painting' (with tuna bottarga mayo), calamari with squash and bottarga and beef tenderloin with smoked ash oil.
While resident chef Hogan will serve refined Maltese-inspired dishes with a twist in dishes like brassicas (with clams, razor clams and beans), risotto with pomodoro and gbejniet cheese, a pre-dessert and pumpkin tarte tatin with carob ice cream and jam.
There will also be a water masterclass held by Aqua Panna and S.Pellegrino.
