Coming In February: 2015 Madrid Fusion
The 2015 Madrid Fusion international chef summit will feature the participation of hundreds of chefs including The Roca Brothers, Elena Arzak and Thomas Keller.
For three days next month, the city of Madrid will welcome hundreds of chefs around the world to the 13th annual Madrid Fusion-International Gastronomic Summit. Themed Traveling Cuisines, the culinary event will be held at the Campo de las Naciones Convention Centre on February 2-4.
Participating Spanish chefs include The Roca Brothers from El Celler de Can Roca, Elena Arzak from Arzak and Quique Dacosta, all of whom have restaurants on the prestigious World's 50 Best Restaurants list. Internationally renown chefs also speaking at Madrid Fusion include Thomas Keller, Joël Robuchon and Daniel Patterson.
Arzak is scheduled to talk about leafy greens, Joan Roca will teach a workshop on vacuum cooking while Patterson will chat cooking with A California State of Mind. Other topics to be discussed range from truffles, vegetable oxidation and urban cuisine to exciting subjects like sauces below zero, ancient flours and Spanish sushi.
The three-day chef summit will feature countless food and wine tastings, award ceremonies and Enofusion, the most important fair for Spanish wine. There's a new addition to the program this year: Tasting Spain, a special area dedicated to traditional Spanish cuisine prepared by Spanish chefs.
If you can't make it to Madrid Fusion this year, swing by the event website where you'll find a dizzying array of gourmet recipes prepared at the congress throughout the years. Our favorite dishes include avocado wafer with lightly salted caviar and almond; cream of jerusalem artichoke with parmesan, mandarin; and martini of ceviche with yellow pepper foam, pisco mosto verde and coffee.
