Care's Chef Ethical Days 2020
The ethical chef event returns to Italy's mountains where an international line-up of chefs will address innovation around sustainability with a commitment to action.
The Ethical Chef Days event returns to South Tyrol in Italy from 26 to 29 March hosted by thee Michelin star chef Norbert Niederkofler.
Set amongst the Alps, the annual chef forum will address innovation around sustainability in a series of lunches, dinners, workshops and the now-famous CARE's Talk, where the importance of "doing" and triggering positive change will be emphasised.
This year's guest chefs
About twenty chefs from all over the world - including several Michelin stars - will gather in Val Pusteria to compare their ethical practices in the kitchen and how they have managed to integrate and encourage the development of the territory in which the chefs work.
In addition to the host Norbert Niederkofler, guest chefs include Dominique Crenn, the only female chef in America to have reached three Michelin stars, and Jorge Vallejo, number 24 in the World's 50 Best Restaurants 2019 with his Quintonil restaurant. Among others are Nick Bril, perfectionist chef-owner of the scenographic The Jane in Antwerp; Cristophe Hardiquest, the Belgian chef animated by a deep love for local products and producers; Hawan Jung, Korean by birth but cosmopolitan by profession who, after working in some of the best restaurants in the world, now manages the kitchens of the Four Seasons Hotel Lion Palace in Saint Petersburg; and the "king of chocolate", as is known by most, maître pâtissier Ernst Knam.
The Location
AlpiNN Food Space & Restaurant returns as the headquarters for the three-day event. The "House of Cook the Mountain", as the creators Norbert Niederkofler and Paolo Ferretti like to call it, located at the top of Plan de Corones.
