"Les Madones" Cooking at Le Fooding: Chef Adeline Grattard

This year Le Fooding and S.Pellegrino will organize three pop-up dinners and thirteen female chefs will be hosting. We couldn't resist getting to know these inspiring women one by one, on this post the chef Adeline Grattard of restaurant Yam'Tcha, Paris 1. She won the Prix Fooding Guide 2010  for best female chef.  Adeline describes herself as a brave gourmande who likes to push the basic ingredients first and combine them with a sauce.

Could you describe to FDL the dish you will be making on Sunday the 17th of November, Lotte rôtie sur l’arête, shitakés, sauce XO ?
Roasted monkfish, shitake and XO sauce, it totally reflects our restaurant Yam'Tcha, there is the sea and the hot pepper paired with wine from Domaine Breton, Bourgueil "Perrières" (magnum) 2009.

What kind of challenges did you face to get here?
Balancing family with work.

Plans for the future?
A winter garden and a house.
