Here’s yet another wonderful speech from this year’s Mad Symposium in Denmark, this time with the Californian chef Chris Cosentino delivering a word of warning with his “Be Careful What You Wish For” presentation.
Cosentino touches on the darker side of celebrity chef and food television discussing his own experiences of stepping into the world of food on television only for it to have a negative impact on his career and physical wellbeing.
Cosentino is as honest as it gets in this tell all account of the industry, holding back tears as he tells his personal story of entering the world of food television.
He finishes with advice to young chefs about how they need mentors before deciding to step away from the kitchen and questioning why it is that chefs are instantly labelled ‘sellouts’ if they leave the kitchen for screen time.
For any young chefs in the industry this is a word of warning packed with food for thought on how the media operate surrounding food, preferring great sound bites over great bites of food.
