Antonia Klugmann: How Italian Cuisine is Changing

Antonia Klugmann is a chef who is making big moves at her L'Argine a Vencó restaurant in the North of Italy – this year the chef has been talked about a lot within her home country and she's now taking her message and cuisine to the international arena. 

She isn’t so well known outside of Italy at the moment but this is something that’s sure to change. 

Klugmann’s restaurant is situated in a unique area, which is something she talks about in her speech below made at Food on The Edge.

Sat on the borders of Italy, Austria and Slovenia, it’s in a unique part of the world where food cultures and traditions have mixed throughout history. 

This has given Klugmann a unique view towards cuisine and some interesting viewpoints towards Italian cuisine and how it's changing.
