Here’s a great video from the La Confiserie Candy Labs in Montreal as the show of the traditional method for rolling hard candy.
It’s amazing to watch the people as they work with the difficult material that’s constantly trying to set on them. The videos shows the process as high slabs of flavoured sugar is mixed together and stretched super thing to create the eventual candy.
Each candy comes complete with a nice design in the middle and the video shows exactly how this is achieved.
