The difference between a great restaurant and an amazing one can be down to many factors. Food, decor, atmosphere, consistency - there’s a whole list of things but one of the major differences is service.
Great, truly well done, service is very hard to come by and only a few restaurants really managed to nail it.
One of these places is Le Gavroche in London - the first restaurant in the English capital to receive three Michelin stars - a place where customer really is king and the service sleek and unassuming.
Much of the famous service at Le Gavroche is thanks to Silvano Giraldin, the maître d’ and managing director in charge of the floor and a master considered by many to be one of the ‘godfathers of the art of the table.’
In the video below filmed at this year’s MAD 4 in Copenhagen, Giraldin talks about what he sees as the essential factors that contribute to a restaurant’s success.
On top of some truly useful table tips from the master Giraldin also puts the dining room into some historical context looking at some of the major changes in the industry over the past 30 years.
