The Michelin Guide for Tokyo 2015 - The List

The Michelin Guide for Tokyo 2015 has been released with one new restaurant receiving three Michelin stars.

The Makimura restaurant now joins 11 other restaurants in the guide, taking Tokyo’s total to 12 three-star restaurants.

Two new restaurants entered the guide in the two-star category and three restaurants were promoted from one to two stars. In the one-star section, 19 new restaurants feature in the 2015 selection.

This is the first time Michelin have published a dedicated guide to Tokyo and the guide creators say it’s the first time that washoku (traditional Japanese cuisine) has been included in their Bib Gourmand selections, with washoku now accounting for 60% of the addresses in the guide.

Michael Elllis, International Director of the Michelin guide, said: “With wide varieties of “washoku”, traditional Japanese cuisine of Bib Gourmand award, this 2015 edition reflects “washoku”’s tremendous gastronomic energy. “Washoku” has been added to UNESCO’s Intangible Cultural Heritage list and it is getting more attention lately in the world. In this edition, 24 cuisine categories awarded as both stars and Bib Gourmand belonging to “washoku” are listed. It represents more than 60% of the restaurants’ addresses in this guide.”

In total the Michelin Guide for Tokyo 2015 features 12 three-star restaurants, 53 two-star restaurants and 161 one-star restaurants.
