The company behind the popular spice condiment Tabasco sauce are about to open a Cajun food restaurant that will use different varieties of the hot sauce in dishes.
The restaurant, called 1868, is part of a new visitor centre at Tabasco’s Avery Island headquarters and has been built to celebrate the company’s 150 years on the site.
The new visitor centre also includes a museum that will tell the story of the sauce and the company’s history on Avery Island.
The restaurant which opens on Monday will offer a mix of Louisiana classics with The Advertiser, who got a early look at the menu, reporting a mix of interesting sounding plates such as pepper jelly boudin, pepper barrel crawfish etouffee, chicken and sausage gumbo, jambalaya and a dessert of raspberry chipotle ice cream.
We’re yet to see any pictures of the plates but expect them to be available on Monday, while we all wait for that, here’s a nice collection of Cajun recipes for you to try at home.
