"Dear friend, after 12 years we are happy to announce our second restaurant, in partnership with chef Kristian Baumann."
This is what the latest post from chef Rene Redzepi reads, a small post on the chef’s Facebook page to announce the him and his team are finally opening his second restaurant.
There was already news that Redzepi was planning a second more casual place in partnership with Baumann but details are now confirmed. Called 108, the new restaurant will open in a neighbourhood called Christianshavn in Copenhagen and will be fronted by Baumann in the kitchen, general manager Thomas Østergaard Bagge and restaurant manager Jacob Møller.
In a release on the Noma site, the duo say: “ Our restaurant will be a place for families to come together for a quick dinner on a Monday night, or for friends to sit down on a Friday evening for a longer meal, and really explore what we have to offer. We want to add value to the existing traditions of an already brilliant dining scene- and hope to influence the Copenhagen kitchen”.
Before they open inside permanent residence, the 108 restaurant team will run a pop-up inside Noma from mid January to April while Redzepi and crew are working in Australia. Bookings for these 108 pop-ups can be made online.
