When the first ever Singapore Michelin guide was launched this month, the most surprising announcement was the inclusion of two hawker stalls in the guide’s one start category: Hong Kong Soya Sauce Chicken Rice and Noodle and Hill Street Tai Hwa Pork Noodle.
Michelin is synonymous with ‘high-end’ and often luxurious settings and the inclusion of what are essentially street stalls was a welcome shock.
To try and explain this decision a little more, Michelin have released a video that focuses in on the HK Soya Sauce Chicken Rice and Noodle – the first Michelin–starred street food stall in the world.
The story is told by the food stall’s chef Chan Hon Meng who speaks about what it was like to discover he’d been awarded a star by Michelin.
