'Live From Milan', Fabio Pisani Takes The Stage | Video

It's Day 3 of Live From Milan, the event organized by S.Pellegrino during Fuorisalone during Milan Design Week. We've seen the performances of Davide Scabin, Massimo Bottura and Luigi Taglienti, but today Alessandro Negrini and Fabio Pisani shared their interpretation of spaghetti.

Pisani, half soul of the eclectic duo from Puglia (located in the heel of Italy's boot) took the stage. The chef, who has worked at Il Luogo di Aimo e Nadia since 2005, prepared the Spaghettoni with  Nolche black olives (here is the full recipe). The spaghetti was from Puglia and took very long to cook (twenty minutes!) while the onions hailed from Tropea and the tomatoes came from Sicily. A dish irresistibly Mediterranean to which Pisani added scents of basil, oregano and lemon.

''It's a feeling that comes from the heart,'' Pisani said before ending with an enthusiast and spontaneous cry: "Viva l'Italia!".

He also prepared a fun finger food inspired by an Italian classic: Olives stuffed with panzanella and eggplant marinated in sunflower honey.

The second finger food, That's raviolo!, featured squid ravioli accompanied with smoked Scamorza cheese, pistachio and green pea gelato.

Pisano gave his menu a sweet ending with Bread and Jam, a dessert with a simple name but a surprisingly delightful flavor. It was composed of bread made with natural yeast stuffed with orange marmalade and topped with chocolate mousse made with Venezuelan cacao and a dash of extra virgin olive oil.

This weekend the fun from Live From Milan continues: expect to see Enrico Cerea and Davide Oldani on Saturday and Sunday, respectively.
