Speaking at the Food on the Edge 2017 symposium in Galway, Ireland, Copenhagen-born Seidler said it had always been the plan to leave Gustu once the team there had been trained to the required level and she will leave this December. After heading off for a quick break in the Himalayas, she says she has no firm plans for the future, yet, though a move back to Europe could be a possibillity.
"We have a lot of interesting offers, but I'm not sure yet," Seidler told Fine Dining Lovers. "[Gustu was] a big challenge. You're not only a cook, you're a psychologist, a mum and a sister. It's a heavy responsibility to take on," she said when asked if she would consider taking on a similar project.
Gustu was established by Noma co-founder Claus Meyer to bring attention to Bolivian produce and producers, as well as providing jobs, training and education to local people, in what is one of the poorest places in Bolivia. Seidler, who has a stake in Gustu, will continue to assist with the project when needed, but will no longer be living in Bolivia she's confirmed.
