How can a fine dining restaurant support the development of a country? That was the question posed by chef Kamilla Seidler at the recent Food on the Edge symposium in Galway, Ireland.
She was there to speak about Gustu, the restaurant in La Paz, Bolivia where she’s been head chef for the past five years and for which in 2016 she was named Latin America’s Best Female Chef. Seidler was headhunted for the role by Noma co-founder Claus Meyer.
The idea behind Gustu was to try and aid the development of what is a poor city in a poor country through food, by providing training and education of local people, and by increasing the value of local products.
Seidler will soon be handing over the reins of the restaurant to the team she’s helped train.
