The three Michelin-starred chef of Jean-Georges in New York is due to take over the space currently occupied by Espelette brasserie and will serve breakfast, lunch, afternoon tea, and dinner in keeping with his characteristically uncomplicated style of food.
“The food will be simple and approachable: Farm-to-table dining similar to what I do at the Mark and ABC Kitchen in New York, only with English ingredients. You have some of the best produce in the world here,” Bloomberg reports.
The French-born restaurateur returns to take on London after his original foray in the 1980s at 90 Park Lane, where he obtained a Michelin star, and the recent closure of pan-Asian Spice Market at the W Hotel in Leicester Square. He joins a growing number of US chefs crossing the Atlantic to be a part of one of the world's most vibrant and dynamic dining scenes in the world.
With a portfolio of global restaurants and a string of Michelin stars to his name the chef remains undaunted: “It is very competitive. But London is a big city and there is room for more restaurants. If you have the right food, the right atmosphere, the right location and the right prices, you can do well,” he said.
The restaurant has yet to be named, but the menu is already taking shape: "Langoustines with a beautiful sauce, and possibly a black Angus hamburger," have already been mentioned by the chef.
