Identità Golose - Day 3

The last day of Identità Golose has come to a close with large crowds from across the food industry in Milan to hear speeches from some of the world’s best chefs. The morning started with a bang as the 10 Italian chefs taking part in the S.Pellegrino Young Chef 2015 presented their dishes to the Italian jury which included Cristina Bowerman, Davide Oldani, Moreno Cedroni, Carlo Cracco, Enrico Cerea and Ernesto Iaccarino.

It was Paolo Griffa with a dish of Tripe & Foie Gras who was picked to represent Italy at the world final of the talent search which will take place during Expo Milano 2015, June 25th-27th. Griffa currently works at the Piccolo Lago Restaurant in Verbania and will join 20 other finalists in June to find out if he will become the S.Pellegrino Young Chef 2015.

Chefs on stage for presentations in the morning included Lorenzo Cogo, Giorgio Damini and Lionello Cera as Carlo Cracco kicked off a round of talks dedicated to the North-East of Italy.

In the afternoon it was Roberto Flore from the Nordic Food Lab who captured imagination with a presentation that showed just how diverse the research is taking place at the lab. In an impactful speech he spoke about his work with Japanese Hornets and also gave the crowd a taste of a gin brewed in the UK with ants - more to follow on this later.

The crowds filtered out after three days of motivational speeches that once again showed how quickly the gastronomic world is evolving, constantly challenging itself and constantly surprising audiences with wonderful new discoveries.
