Identità Golose 2013, Day 1

Magnus Nilsson from Sweden, Ryan Clift from Singapore, Lorenzo Cogo from Vicenza, Massimiliano Alajmo from Padova and Josep Roca from Spain - just some of the chefs who took to the stage for the opening day of the international chef congress Identita Golose in Milan.

Working to this year's theme of respect the chefs presented talks on a range of topics. Massimiliano focused on cold cooking, Nillson on the importance of the end of a meal and Clift revealed flavor combinations and how he works to push these boundaries at his Tippling Club restaurant in Singapore.

 Crowds of people turned out to watch the chefs and sample some of the amazing food available from the stands. Beautiful flower based desserts, risotto with pear and coffee and fresh pizza are just some of the wonderful dishes served to revelers.

Next door glasses were polished and filled at the Milano Food and Wine Festival with hundreds of varieties of wine from all over Italy presented. This was coupled with fish pasta from Milan's own Viviana Varese and a secret recipe presentation from Andrea Aprea.

Many people, excited to learn the merits of good wine and water pairing, joined the sommelier Vaccarini at the S.Pellegrino and Acqua Panna stand for a wine and water tasting while others watched on as chef Cristina Bowerman cooked alongside the Italian fencing champion Diego Confalonieri.

The overriding theme of respect and a focus on the two classic Italian dishes of  pasta and pizza were on show throughout with the usual tone of an open forum for sharing that is appreciated by all those who attend the congress.

The event will run until the 12th February with further talks to come from Joan Roca, Daniel Humm and Massimo Bottura.
