90 diners, 14 world class chefs, four teams and one extraordinary evening – it can only be the culinary adventure that unfolded on Sunday night, in the Brazilian city of São Paulo, simply known as WALK WITH US SÃO PAULO. This novel event saw expectant diners arrive at Dalva e Dito restaurant for the chef-studded sequel to Walk With Us London.
Chef Rodrigo Oliveira presented a 'matrix menu' with two starters, a main course and a dessert in honour of the Northeast Hinterland and his father, Ze Almeida, founder of the iconic Mocotó restaurant listed in Latin America's 50 Best Restaurants.
The chefs were divided into three groups of four for the duration of the evening, presenting their own creative spin on the 'matrix menu' using the same ingredients, but re-interpreting them into new dishes using their own signature techniques.
Matrix Menu: Seu Ze Almeida and Rodrigo Oliveira. Team 1: Inaki Aizpitarte, Jefferson Rueda, Alberto Landgraf, Thomas Troisgros. Team 2: Rodolfo Guzman, Virgilio Martinez, Leonardo Peireira, Helena Rizzo + Daniel Redondo. Team 3: Alex Atala, Manu Buffara, Thiago Castanho, Mitsuharu Tsumura.
Guests were treated to dishes that ranged from soft pork crackling to sorbet bacuri, ant paçoca and yogurt powder with açaí.
The food was paired with wines from renowned producers Nino Franco Allegrini and Beronia, along with Italian S.Pellegrino and Acqua Panna water.
Dish images: tongue with pork skin and black mustard, and "manic cake" with “carne de sol” (sun-dried meat), banana dust and cocoa.
