Adrià Predicts 1 Million Euros a Year for elBulli Foundation

In what is the first solid bussiness plan to come out since the elBulli Foundation was announced back in 2012 - Ferran Adrià has released data that estimates the foundation could make up to 1 million euros a year in profits from a range of sources (or in this case, maybe sauces).

The acclaimed chef announced that the elBulli Foundation, which will cost more than 6 million euros to create, will charge an entrance fee once it opens in March 2015, Spanish publication Cinco Días reports.

An estimated 200,000 visitors are expected to descend upon the old site of elBulli in Roses to bear witness to the legacy of the famed restaurant. Adrià calculates that would generate anywhere from 600,000 to 700,000 euros. It shuuld be noted that scholars wouldn't be charged an entrance fee.

Additional proceeds would come from the gift shop, which is expected to generate 159,000 euros, and the on-site restaurant which could bring in an estimated 87,000 euros. In total, the foundation would benefit from 946,000 euros annually.

Adrià is adamant the elBulli Foundation remains a non-profit organization. All of the money earned would be to support the day-to-day costs of running the project. So far, the chef has offset some of the costs of building the foundation by raising funds through two Sotheby's elBulli wine auctions.

The elBulli Foundation will be a high-tech gastronomic think tank based upon three pillars. Adrià describes them as: ''elBulli 1846, which is the number of dishes we created in what was named the world's best restaurant five times, but it also coincides with the birth date of Auguste Escoffier, the father of modern French cuisine; elBulli DNA, which focuses on research and the internet; and the BulliPedia for the release of information.''
