Fergus Henderson and Trevor Gulliver. Fergus the straight talking British chef - famous for his honest cooking and respect of ingredients such as heart, offal, and the cuts of meat that take love and care. Trevor a wine aficionado and owner of HG wines - together they run the Michelin starred St John Restaurant in London.
They're restaurant and now hotel in London is famous and the pair have both worked in the industry for many years.
The video below is from Mad Food Camp 2012 and shows Fergus talking about appetite and how it affects him through the day - explaining how he needs to enjoy a bit of food at 11 just to stave off lunch.
The chef also talks about why the philosophy at St John has evolved the way it has and why he just thinks it's polite to eat all of the animal you cook.
