The little corner of Naples in London by Ciro Salvo, a third generation master pizza maker, has been named Europe’s best Pizza by 50 Top Pizza.
Salvo has researched and developed a type of super hydrated pizza dough, with a very high water content, for his Neoplolitan style pizza. Sourcing ingredients from Italy he employs special techniques with specially sourced flours, water and a long, slow fermentation process for a pizza that is really special.
The title was awarded by 50 Top Pizza, in partnership with S.Pellegrino and Aqua Panna, an organisation that judges and lists pizzerias from all around the world in various categories: 50 Top Europe, Italy, North America, Africa, Japan and Oceania.
In the 50 Top Pizza Europe list, second place was awarded to Bijou, Paris by chef Gennaro Nastri, while third place went to Bæst in Copenhagen.
They say that pizza might be Italy’s greatest contribution to the world and you can see just how popular the Neopolitan street food dish is by the diversity of places in the Top 50 Pizza lists. Just Europe alone features awardees from 26 different countries.
The 50 Best Pizza North America will be announced on the 27th of June at a ceremony at the James Beard Foundation in New York.
