Scientists say they have produced a strain of seaweed that when fried tastes just like bacon but is packed with a lot more healthy nutrients and vitamins than the real thing.
The new strain has been produced from dulse, a red marine algae that grows wild on the coastlines of the Atlantic and Pacific, and took scientists at Oregon University over 10 years to develop.
“This stuff is pretty amazing,” said the chief researcher Chris Langdon, “When you fry it, which I have done, it tastes like bacon, not seaweed. And it’s a pretty strong bacon flavour."
The university have patented the strain and hope to commercialise the product by working with food companies and chefs to use the bacon flavoured seaweed in dishes.
