The latest restaurant to open in Copenhagen is that of ex-Noma chef Matt Orlando who recently opened the Amass restaurant on the waterside in Refshalevej.
Orlando was the head chef at Noma for many years and news that he was setting out to start his very own venture has excited the industry since it was announced at the beginning of 2013.
The new restaurant opened in July and we now have a much better idea of the set up. It features a large, open plan, dining room and a great outdoor garden for fresh food producton and place for diners to relax. Amass also features a communual table that seats around 10 diners and a six seats in the restaurant are reserved for walk-ins.
Orlando says he wants to food at Amass to be "spontaneous, fresh, exciting and thought provoking" and with dishes like shrimp and hot smoked foie gras, grilled chicken skin, peas, egg yolk and virgin butter and the super fresh sounding fava beans with samphire, crème fraîche and St. John's Wort (a beautiful yellow plant).

The Nordic look and the strong ties that Orlando and team aim to make with local producers and farmers is something that shows off an obvious Noma ingrained logic. Amass also has a strong selection of wines that are produced without pesticides, unique beers and coffees that will be changed depending on season.
It seems the restaurant has started strongly and with many excited to taste the chefs food and see exactly how the Nordic scene is evolving we expect the big reviews to come rolling in very soon. For now here's a look at some of the restaurant's dishes.
