2016 is turning out to be quite the year for Alain Passard. Not only does his three star Paris restaurant, Arpège, celebrate its 30th anniversary, but he will also receive the The Diners Club Lifetime Achievement Award 2016 at The World’s 50 Best Restaurants ceremony in New York in June.

Illustrious Career

Arpège is a regular in The World’s 50 Best Restaurants and Passard, who began his career at Le Lion d’Or in Liffré, before moving on to Alain Sederen’s L’Archestrat, later to become Arpège, had this to say about the Lifetime Achievement Award: “A big thank you to all the chefs, maîtres d'hôtel and sommeliers who have worked with me and helped me to shape the cuisine of Arpège. The most beautiful cookbook is dictated by nature, and we are merely the spokesmen inspired by that.”

Nature's Larder

Arpège is known for its focus on vegetables – it doesn’t serve red meat – and the restaurant now has several gardens from which fresh organic produce is cultivated for use in its revered dishes.

Watch Alain Passard, “The Maestro of Vegetable Cuisine”, explain his raison d'être in the video interview below and see some of his most illustrious protégés pay homage to the great man at the S.Pellegrino-sponsored Passard et les Arpégiens event in Paris here.
