19 Ingredients Trending in Fine Dining

Ingredients come in and out of fashion on a constant basis, last year we saw cauliflower popping up across restaurant menus and it's hard to not have noticed the poke boom in the fast casual market. The world of fine dining is no different - there's sometimes new, exciting ingredients that have just been discovered by chefs, and, more often than not, there's the ingredients that are suddenly finding a resurgence on menus.

Tastewise is a food intelligence and analysis company that help predict major food trends in the industry and they've just compiled a list of fine dining ingredients that are trending at the moment. The company uses AI to scan 250 million datapoints per entry, analyzing menus, recipes and social platforms to get real-time information on what’s trending on our plates around the world.

Some of the trends they have listed can be explained by seasonality, with month-on-month growth for ingredients such as rhubarb, or truffles, others seem to be a bit more random and require further investigation. Here are 19 fine dining food trends on the rise.

Aglio e Olio – fermented ramps, parmigiano, garlic, calabrian chile Yeah, this dish looks messy af, but the pasta was perfectly cooked and full of delicious flavor. I could have eaten a second serving easily. Sometimes, you just have to overlook the plating and remember what’s really important in eating. If the course tastes great, all else can be forgiven 😋 @spiaggiachicago @insta.flamm Michelin rating: ⭐️ - #hungryglomad_chicago #mystorywithmichelin #buzzfeedfood #dailyfoods #dailyfoodie #dailyfoodfeed #foodbeast #gastronomie #chicagoeats #chicagofoodgoals #chicagofoodmag #chicagofoodauthority #chicagofood #chicagofoodie #chicagofoodies #chicagofoodgoals #chicagofoodscene #bestfoodchicago #likefoodchicago #312food #chicagofoodanddrink #chicagofoodstories #chicagofoods #chicagofoodfanatic #chicagoandfood #fabfoodchicago #top_chicago_restaurants #pasta #italianfoods #italiancuisine

Foie Gras | Marinated with Squash and Pumpkin Seeds 🍽 From the lunch experience on March 17, 2018. 🍞
The dish itself is there for a while however it was not included in the experience until recently according to our chat with the service. The dish is served with a fresh out of the oven bread with some pumpkin flavours. The foie gras itself has this amazing harmony with the pumpkin seeds which is in my experience is like a resetting effect that keeps your palate at a level to experience the taste over and over again without ever ending. Basically, tasting this foie gras and than cracking a seed in your mouth let’s you just re-taste the foie gras like the first time, and you can do this over and over again! . . . #foiegras #danielhumm #elevenmadisonpark #emp #newyork #newyorkcity #nyc #usa #🇺🇸 #michelinguide #gastroart #theartofplating #artofplating #culinary #plating #fooddesign #chef #foodplating #expertfoods #foodgram #beautifulcuisines #foodstyling #foods #finedining #chefstalent #food52 #foodandwine #culinaryart #gastronomie #palateoftheuniverse
