It's sushi time! Vegan sushi time, that is. These recipes who you how easy it is to turn this Japanese staple into a dish even vegans will love. Once you've got your bamboo mat, nori and other sushi staples on hand you can start by making Thai-style vegan sushi (pictured below). This recipe features rolls of sticky rice with cucumber dressed in a fruity garlic sauce. Yum!
Arborio rice and sundried tomatoes make for a great risotto but they also double as Italian vegan sushi (top image). The recipe includes a touch of balsamic vinegar to up the umami factor.
To make things even more interesting, you can make Moroccan-style vegan sushi. This recipe swaps rice for couscous and uses traditional Moroccan ingredients like preserved lemons.
