Sushi might seem like a relatively new arrival in your city but did you know that the first ever piece of documented sushi dates back to 3500 BC?

We’re guessing the answer to that question is a no, and that you’ll find this food infographic just as interesting as we did when we first saw it.

Created by Domo Daruma, it looks at the history of sushi, when it started, how it evolved and when some of the most important events in the development of sushi took place.

For example, the first true hand rolled Nigiri that we class as sushi today is a world away from the fermented fish varieties that sushi started with.
