Beloved at tapas bars across the world, croquettes are an exciting offering for brunch or lunch.  Their crispy exterior conceals a heavenly smooth filling which is what makes them so irresistible.

To get your croquette game on, it's best if you serve a few varieties. You can try pairing these horseradish croquettes with turmeric and jasmine (pictured below) with these royal Louis XVI's potato croquettes.

If you're feeling a little more adventurous, sample these burdock croquettes or salt cod croquettes (pictured above), the latter are a delicacy in the Caribbean.

Of course, there's always the classic Spanish ham croquettes. Don't forget to serve your tasty creations with a dipping sauce, preferrably aioli.
