Aside from overnight oats, it's hard to think of an easier breakfast than a simple chia seed pudding. With just three ingredients you can turn these tiny black seeds into a creamy treat that tastes more like dessert than breakfast.
Why eat chia seeds?
They may be tiny but they do sure do pack a nutritional punch. Ounce per ounce, they have more potassium than bananas, more iron than spinach and more calcium than cow's milk. Isn't that amazing?
How They Work
Chia seeds expand when combined with liquid and take on a pleasant gelatinous texture. You can mix them with anything from yogurt and kefir to coconut milk and juice. Simply mix the ingredients in a mason jar or bowl overnight and you've got yourself a tasty breakfast you can enjoy on the go.

Simple Chia Seed Pudding Recipe
2 cups of your favorite milk
2 tablespoons of chia seeds
1 tablespoon of honey
Pour in a jar, mix and let set overnight (or for at least 20 minutes). Top with fresh fruit, if desired.
