With Cauliflower tipped as one of 2014's top vegetables we thought we'd highlight a great recipe that uses the whole vegetable at the centre of the dish.
Roasting a cauliflower gives the food a whole new flavor, rich and much deeper than if it was steamed or boiled.
This recipe from Feasting at Home sets out the guidelines for preparing a whole roasted cauliflower with black tahini (a paste made with sesame seeds) and sumac (a tart spice used in Mediterranean and Middle Eastern cooking).
The finished dish in this post looks absolutely beautiful and presenting it whole in the pan makes for a great center piece. There's pictures to guide you through the whole process and trust us, there's nothing better than a whole roasted cauliflower.
