Peking duck is hands down Beijing's most famous dish. Its crispy skin and tender meat makes it simply irrestible. So what's the best recipe for peking duck? Well, that depends on how you'd like to eat it.

Take your pick among the original crispy-skinned duck dipped in a sweet and sour sauce, shredded in a salad or wrapped in Moo Shu pancakes. As far as we are concerned, every recipe is a winner.

The thing to remember when making peking duck is to keep the skin as dry as possible so you end up with the crispiest bird of your life. Some people air dry the duck or set it in front of a fan before roasting. We encourage you to experiment and find the method that's best for you.
