OCTOPUS WITH TOMATO JAM, CHORIZO WITH ARTICHOKE HEARTS

Chef Michael Kempf from the Mandala Hotel produced this mouth watering dish at the 2013 S.Pellegrino Sapori Ticino month-long food festival recently held in Switzerland.  We think you'll agree he was on to a winner. Once the octopus has been boiled the tentacles are chargrilled giving them additional colour and flavour.

OCTOPUS LOLLIPOPS AND PORK BELLY

Eugenio Roncoroni and Beniamino Nespor, chefs at Al Mercato restaurant in Milan created this unusual and fun dish which is sure to create a stir at a dinner party. The recipe hightlights the capacity of octopus to take on aromatics like tandoori spice, oyster sauce and acacia honey as well as being sufficiently mild to be paired with pork belly.

Octopus and Potato Salad

A classic Italian octopus salad to enjoy as an appetizer or a main dish. Enjoy the ocotpus in its full glory in this simple salad along with potatoes , artichokes and a citrus dressing. Best served warm or at room temperature.
