Having a few no-cook dinner recipes in your repertoire is essential when it's too hot to cook, or when you just don't feel like it. We love recipes like a simple ceviche or nicoise salad which can be served as an appetizer or main course.

Other great no-cook dinner recipes include raw vegan dishes, chilled soups and Mediterranean vegetable dishes, easy to make and rewarding on flavour.

Take the heat out of the kitchen and create these simple recipes without using a cooking stove, oven or microwave this Meatless Monday.

Raw Vegan Lasagna with Zucchini

It may not look like it, but this dish really requires no cooking at all. The layered effect is made using a macadamia cheese, basil pesto and a creamy tomato sauce to accompany the raw zucchini.

Ceviche

One of the classic no cook recipes from Latin America, this dish will appeal to seafood lovers. The raw fish is cured in citrus juices instead of cooking.

Nicoise Salad with Fresh Tuna

Similar to ceviche, the fresh tuna is marinated in lemon juice and oil for a couple of hours prior to serving. This dish also includes some precooked beans, potatoes and eggs. If you don't have any of these knocking around in the fridge anyway, think ahead and you can cook them the day before, 

Ajo Blanco Soup

A cold vegan soup for garlic lovers, this is a Spanish classic soup for the hottest of days. Traditionally eaten with grapes, melon, cured ham or anchovies.

Caprese Salad

When you're really short on ideas, nothing beats the simplicity of a tomato and mozarella salad. This dish is all about the quality of the raw materials so be sure to find the finest tomatoes, Mozzarella di Bufala and olive oil available.  Serve with a good bread to mop up the juices.
