Meatless Monday: An Italian Menu

Happy Meatless Monday! Do you know what tasty vegetarian treats you'll make today? If not, take a look at our meatless Italian menu - full of great recipes that are delicious and good for you.

We begin our vegetarian feast with Italian crostini with olives. This is a great appetizer that will set the mood for the other elementes of this exciting Italian menu.

Now that Tropea onions are in season in Italy, why not use them to make pasta? These tender onions flavor this spaghettoni with hot peppers, cherry tomatoes and herbs.  It's a pasta dish that is filling but yet remains light. Can't find Tropea onions? No worries, just substitute with red onion.

Follow your pasta with this refreshing fennel and radicchio salad with gorgonzola cheese (pictured above).The salad is a favorite in the town of Treviso which is located near Venice.

Finally, we bring our exciting Meatless Monday Italian menu to an end with a luscious panna cotta ice cream with strawberries

    Dear Artemis,

    Thank you for reaching out to us, you've raised a great question. Our resident chef Rose recommends these vegetarian substitutes for gelatin: agar agar and Unflavored Vegan Jel by Natural Deserts. To substitute 1 teaspoon of gelatin, you can use 1 teaspoon of agar powder or 1 1/2 teaspoons of Vegan Jel.
