If you’re looking for a simple one–pot dinner to make tonight, this Jacques Pépin chicken recipe is perfect.
In the video below, we see the illustrious French chef prepare a hearty French stew known as jardinière, a favourite of his mother’s. This Jacques Pépin chicken recipe is fairly straightforward: chicken, pancetta, potatoes and vegetables simmered with garlic, herbs, white wine and stock.
The video ably demonstrates the importance of preparing all your ingredients before you start cooking and we also get to witness Pépin’s enviable knife skills. There are some useful tips too, like not washing your mushrooms until the very last minute, as they will begin to deteriorate quickly (some suggest it’s best not to use water at all, but rather a soft brush).
