How To Preserve Peppers - 2 Quick N' Easy Techniques

Curious about how to preserve peppers? You'll love these two easy techniques that will ensure you'll have plenty of peppers to use in your favorite dishes year round.

HOW TO PRESERVE PEPPERS: THE EASIEST WAY

Hands down, the easiest way to preserve peppers is to freeze them. But don't go running for a freezer bag just yet, as the peppers need to be prepped before going into the freezer.

First, wash and dry the peppers throughly. Cut open and remove the stems and seeds then proceed to slice into julienne strips, small chunks, or rounds (in the case of jalapeño peppers). Now you are ready to put them in freezer bags - just be sure not to overcrowd the bag so it seals properly. The peppers will keep well up to six months.

HOW TO PRESERVE PEPPERS: SECOND EASIEST WAY

Quick pickling is also a very easy method for preserving peppers and one that doesn't take much time. Prepare the peppers as mentioned above but instead of freezing them put them in a jar. Fill the jar up to an inch from the top and proceed to make this quick brine*:

For each pepper you'll need:

2 cups unseasoned rice vinegar
1/2 cup sugar
2 bay leaves (or curry leaves)
1 t mustard seeds( or juniper berries and red chili flakes)

Combine vinegar, water, sugar, bay leaves, mustard seeds in a stainless steel pan. Bring to simmer, cook until sugar is dissolved. Pour the hot liquid in the jar until the peppers are completely submerged. Cover and allow the jar to cool at room temperature before refrigerating. The peppers will keep for months if completely submerged in liquid.
